Simply Delicious Pear Vichyssoise
Ingredients:

1 tbsp (15 ml) |
butter |
|
1/2 cup (125 ml) |
onions, chopped |
|
2 cups (500 ml) |
leeks, white part only, chopped |
|
2 cups (500 ml) |
baking potatoes, peeled and chopped |
|
2 cans (10 oz / 284 ml) |
salt-reduced condensed chicken broth, undiluted |
|
1 ripe pear |
peeled, cored and chopped |
|
3 cups (750 ml) |
milk |
|
2 tbsp (30 ml) |
fresh chives or cilantro, chopped |
Directions:
- In heavy saucepan over medium heat: melt butter.
- Add onions. Sauté until soft-do not brown.
- Add potatoes, leeks and broth. Cook uncovered until tender.
- Add pears and purée until smooth.
- Add milk. Chill and serve, sprinkled with herbs.
ESHA note: unsalted butter and 2% milk were used for the analysis.
Make this recipe even healthier by using 1% milk. You can also replace the butter with margarine or vegetable oil.
