Quick Egg Salad

Ingredients:

1 Egg
1 ½ tsp Light Mayonnaise
½ tsp sweet pickle relish
Salt and Pepper (To Taste)

Directions:

Microwave Preparation

  • Sprinkle a few grains of salt in bottom of egg cooker (or microwave-safe bowl or mug). Break one egg into egg cooker. With a fork, pierce yolk and white to bottom of cooker several times.
  • Piercing is necessary to prevent "exploding" during cooking. Place lid on cooker base, lining up notches. Twist to secure (or cover with microwave-safe plastic wrap if using a bowl or a mug).
  • Microwave on High (100%) for 45 seconds. Let stand for 30 seconds before removing egg from egg cooker. Refrigerate until cool.
  • Mash egg with fork and blend with light mayonnaise, sweet pickle relish and salt and pepper.

Salt and Pepper were not used in this recipe because they are listed as "Optional" or "To Taste"
